Ingredients

Scale

Chicken and Seasoning

  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 2 tsp Italian seasoning
  • Salt and pepper, to taste

Sauce

  • 3 cloves fresh garlic, minced
  • 3 tbsp extra virgin olive oil
  • 1 cup low-sodium chicken broth
  • 1/2 cup freshly squeezed lemon juice
  • 1/2 cup grated Parmesan cheese
  • 1 tbsp cornstarch mixed with 2 tbsp cold water

Garnish

  • Fresh parsley, chopped (for garnish)

Instructions

  1. Prepare ingredients: Chop the fresh parsley finely and mince the garlic cloves to have them ready for cooking.
  2. Season chicken: Pat the chicken breasts dry and season both sides generously with salt, freshly ground black pepper, and Italian seasoning.
  3. Sear chicken: Heat the olive oil in a large skillet over medium heat. Add the chicken breasts and cook for 6 to 7 minutes per side, or until they are golden brown and cooked through. Remove from skillet and set aside.
  4. Cook garlic and simmer broth: In the same skillet, add the minced garlic and sauté for about 30 seconds until fragrant. Pour in the low-sodium chicken broth, stirring to deglaze the pan, and let it simmer for 5 minutes to infuse flavor.
  5. Thicken sauce: Stir the cornstarch slurry (cornstarch mixed with cold water) into the skillet. Continue stirring until the sauce thickens and becomes glossy.
  6. Add lemon and cheese: Squeeze the fresh lemon juice over the chicken in the skillet. Sprinkle the grated Parmesan cheese on top and allow it to melt slightly into the sauce.
  7. Garnish and serve: Sprinkle the chopped fresh parsley over the chicken for a burst of color and fresh flavor. Serve hot with your favorite side dishes.

Notes

  • Use freshly squeezed lemon juice for the best vibrant flavor.
  • To keep chicken moist, avoid overcooking; check internal temperature reaches 165°F (74°C).
  • For a gluten-free version, ensure the cornstarch is pure and no other gluten-containing ingredients are present.
  • This dish pairs wonderfully with steamed vegetables, rice, or a crisp green salad.
  • Leftovers can be refrigerated for up to 3 days and reheated gently to preserve texture.
