  • 1 cup Canned Tomato Sauce (plain)
  • 2 cups Beef Broth
  • 10 ounce can Rotel Tomatoes with Green Chilies
  • 1 1/2 cups Corn (frozen, fresh, or canned)
  • 14-ounce can Pinto or Chili Beans

Instructions

  1. Prepare the Base: Heat a large pot over medium-high heat. Add oil, diced onions, and finely diced jalapeno, stirring to coat them evenly in the oil.
  2. Cook the Beef: Add the ground beef to the pot and cook until browned, stirring occasionally for about 8-10 minutes to ensure it cooks evenly and breaks up into crumbles.
  3. Drain Excess Fat & Season: Drain the grease from the pot or blot with a paper towel to remove excess fat. Stir in the taco seasoning, salt, pepper, garlic powder, and chili powder to infuse the beef with bold flavors.
  4. Add Liquids: Reduce the heat to medium, then add the canned tomato sauce, beef broth, and Rotel tomatoes with green chilies. Stir well and allow the soup to simmer until it slightly thickens, approximately 10 minutes.
  5. Incorporate Beans, Corn & Cheese: Stir in the corn, pinto or chili beans, and Mexican cheese blend. Continue heating for about 5 minutes until the cheese melts and the soup is hot throughout. Taste and adjust seasoning if needed.
  6. Serve with Toppings: Ladle soup into bowls and garnish with sour cream, fresh cilantro, extra cheese if desired, crispy tortilla strips, and diced or sliced avocado for added creaminess and texture.
