Ingredients

Scale

Main Ingredients

  • 3 pound chuck roast
  • 2 cups BBQ sauce
  • 1 pound bacon, cooked and crumbled
  • Half an onion, sliced
  • 2 tablespoons Worcestershire sauce
  • 3 cloves garlic, minced
  • ¼ cup brown sugar
  • 4 ounce can diced jalapeños
  • Sliced Colby Jack cheese (6 slices)
  • 6 buns
  • Crispy fried onions, for topping

Instructions

  1. Set Up the Slow Cooker: Place the 3-pound chuck roast into the slow cooker. Pour in the BBQ sauce, add half of the cooked and crumbled bacon, the sliced onion, Worcestershire sauce, minced garlic, brown sugar, and half of the diced jalapeños. Gently stir to combine all ingredients for even flavor distribution.
  2. Cook the Roast: Cover the slow cooker and cook on low for 6-8 hours or on high for 4-6 hours. The goal is to cook the beef until it is very tender and easily shreds with a fork.
  3. Shred the Beef: Once cooked, remove the chuck roast from the slow cooker and shred it using two forks. Drain most of the cooking liquid from the slow cooker, leaving a small amount to keep the shredded beef moist and flavorful.
  4. Assemble the Sandwiches: Place a slice of Colby Jack cheese on the bottom half of each bun. Pile on a generous amount of the shredded beef, then top with the remaining crumbled bacon and diced jalapeños. Finish with a hearty sprinkle of crispy fried onions for added texture and flavor. Top with the bun lid and serve immediately.

Notes

  • You can adjust the spiciness by using more or less jalapeños according to your preference.
  • For extra flavor, consider toasting the buns before assembling the sandwiches.
  • Leftover shredded beef can be stored in the refrigerator for up to 3 days and reheated for quick meals.
  • If you prefer less salty sandwiches, use low-sodium BBQ sauce and bacon.
