Vinaigrette

  • 1 teaspoon fresh garlic (finely grated, loosely packed)

Salad

  • 34 cups Romaine lettuce (chopped)
  • 1/3 cup Feta Cheese (crumbled)
  • 1/4 cup sliced almonds (toasted)
  • Salt and freshly ground pepper (to taste)

Instructions

  1. Toast the almonds: Toast the sliced almonds until they turn lightly golden. You can do this in the oven, on the stovetop in a dry skillet, or in the microwave. This process enhances their flavor and adds a satisfying crunch to the salad.
  2. Mix the vinaigrette: In a small jar or bowl, combine canola oil, rice vinegar, brown sugar, and finely grated garlic. Shake or whisk vigorously until all the ingredients are well blended and the sugar is dissolved. Set the vinaigrette aside to allow the flavors to meld.
  3. Prepare the salad: Place the chopped Romaine lettuce into a large bowl. Sprinkle the crumbled Feta cheese and toasted almonds evenly over the lettuce. Toss the ingredients quickly to mix.
  4. Add the vinaigrette: Drizzle enough vinaigrette over the salad to moisten it to your liking. Toss well to ensure the dressing coats all the ingredients evenly.
