Meatloaf Mixture
- 1 1/2 pounds ground beef
- 3/4 cup breadcrumbs
- 2 large eggs
- 1/3 cup grated Parmesan cheese
- 1 teaspoon Italian seasoning
- 1/2 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
Filling and Topping
- 6 slices deli ham
- 6 slices provolone cheese
- 1 cup fresh baby spinach
- 1 cup marinara sauce
- Prepare the Meat Mixture: In a large bowl, combine the ground beef, breadcrumbs, eggs, grated Parmesan cheese, Italian seasoning, garlic powder, salt, and black pepper. Mix gently to combine, being careful not to overmix to keep the meatloaf tender.
- Shape the Meatloaf Base: Spread the meat mixture evenly onto a piece of parchment paper, forming a rectangle shape to create a base for the filling.
- Layer the Fillings: Arrange the slices of deli ham evenly over the meat base, followed by a layer of provolone cheese, and then spread fresh baby spinach on top of the cheese.
- Roll the Meatloaf: Using the parchment paper to assist, carefully roll the meatloaf up jelly-roll style, ensuring it is tight. Seal the edges and ends to keep the filling inside.
- Transfer to Baking Dish: Place the rolled meatloaf seam side down into a loaf pan or onto a sheet tray to prepare for baking.
- Bake the Meatloaf: Preheat the oven to 375°F (190°C). Bake the meatloaf for 45 to 50 minutes, or until the internal temperature reaches 160°F (71°C) to ensure it is fully cooked.
- Add Marinara Sauce: During the last 10 minutes of baking, spoon the marinara sauce evenly over the top of the meatloaf and return it to the oven to finish cooking.
- Rest and Serve: Remove the meatloaf from the oven and let it rest for 10 minutes before slicing. Serve with extra marinara sauce on the side for added flavor.
Notes
- Do not overmix the meat mixture to maintain a tender texture.
- Use a food thermometer to check the internal temperature for food safety.
- Feel free to substitute fresh mozzarella for provolone for a different cheese flavor.
- The meatloaf can be made ahead and refrigerated before baking for convenience.
- Leftovers can be stored in the refrigerator for up to 3 days or frozen for up to 3 months.
