Instructions

  1. Cook Pasta: Prepare the dry macaroni noodles according to the package instructions. Once cooked, rinse them under cool water and drain thoroughly. Set the pasta aside to cool completely to ensure the salad isn’t warm when assembled.
  2. Make Dressing: In a small bowl, whisk together the thousand island dressing, mayonnaise, Dijon or stone ground mustard, and sauerkraut brine until the mixture is completely blended and smooth.
  3. Combine Salad Ingredients: In a large serving bowl, add the cooled macaroni noodles, diced corned beef, cubed Swiss cheese, drained sauerkraut, and diced dill pickles. Pour the dressing over the mixture and toss gently but thoroughly to evenly coat all ingredients.
