Brownie Batter

  • 1/2 cup salted butter, softened
  • 1 cup creamy peanut butter
  • 3 tablespoons 2% milk
  • 2 cups powdered sugar

  • 2 ounces semi-sweet chocolate

Instructions

  1. Preheat and Prepare Pan: Preheat your oven to 350ºF (175ºC). Line an 8×8″ baking pan with parchment paper or spray it with cooking spray to prevent sticking.
  2. Mix Brownie Batter: In a stand mixer or using an electric mixer, combine the Pillsbury brownie mix, egg, softened cream cheese, and 1/4 cup softened salted butter. Mix well until fully incorporated. The batter will be very thick. Use a rubber spatula to scrape down the sides of the bowl as needed. Spread this dense batter evenly into the prepared baking pan.
  3. Press Reese’s Cups into Batter: Take the frozen whole Reese’s peanut butter cups and arrange them in a 4×4 grid on top of the brownie batter. Press them gently so the tops of the cups are level with the batter surface.
  4. Bake the Brownies: Bake in the preheated oven for about 28 minutes until the edges are set and a toothpick inserted near the center comes out with moist crumbs. Remove from oven and allow brownies to cool completely in the pan.
  5. Prepare Peanut Butter Frosting: While the brownies bake, in a stand mixer, blend together 1/2 cup softened salted butter, 1 cup creamy peanut butter, 2 cups powdered sugar, and 3 tablespoons milk. Mix for 2-3 minutes until the frosting is light, smooth, and fluffy.
  6. Frost the Brownies: Once the brownies are fully cooled, spread the peanut butter frosting evenly over the entire surface of the brownies.
  7. Melt and Drizzle Chocolate: Place 2 ounces of semi-sweet chocolate in a microwave-safe bowl. Heat in 15-second intervals, stirring between each until fully melted but not burnt. Drizzle the melted chocolate over the peanut butter frosting in a decorative pattern. Allow the chocolate to set before slicing and serving.
