Instructions

  1. Preheat Griddle: Preheat an electric griddle to medium heat and set it aside. If you don’t have an electric griddle, a non-stick skillet over medium heat works well.
  2. Prepare Egg Mixture: In a 9×13 pan or a large mixing bowl, whisk together the eggs, milk, pumpkin puree, light brown sugar, vanilla extract, ground cinnamon, and pumpkin pie spice until fully combined.
  3. Butter the Griddle: Lightly butter the surface of the preheated griddle or skillet to prevent sticking and add flavor to the toast.
  4. Dip Bread: Dip each slice of brioche bread into the egg and pumpkin mixture, coating both sides well and allowing the bread to soak up the mixture.
