Ingredients

Scale

Puff Pastry

  • 1 package thawed puff pastry

Filling

  • 1 lb breakfast sausage
  • 4 large eggs
  • 1 cup shredded cheddar cheese
  • Salt and pepper to taste
  • 1 egg (for egg wash)

Instructions

  1. Prepare the Filling: In a skillet over medium heat, cook the breakfast sausage until it is browned and fully cooked, breaking it into smaller pieces as it cooks. Once done, remove from heat and let it cool slightly.
  2. Scramble the Eggs: Crack the eggs into a mixing bowl, whisk together with salt and pepper. Pour the eggs into the same skillet and scramble until just set. Return the cooked sausage to the pan and stir in the shredded cheddar cheese until the cheese is melted and everything is well combined.
  3. Roll Out the Puff Pastry: Preheat your oven to 400°F (200°C). On a lightly floured surface, roll out the thawed puff pastry sheets to about 1/8 inch thickness. Cut the pastry into approximately 4×4 inch squares.
  4. Fill the Pastries: Place a generous spoonful of the sausage, egg, and cheese mixture in the center of each pastry square, being careful not to overfill to avoid messy edges.
  5. Seal and Bake: Fold each pastry square over to form a triangle or rectangle, depending on shape, and firmly press the edges together. Use a fork to crimp the edges for a decorative and secure seal. Brush the tops with an egg wash made from a beaten egg to achieve a golden finish.
  6. Bake to Perfection: Place the filled pastries on a parchment-lined baking sheet and bake in the preheated oven for 15-20 minutes until puffed and golden brown. Allow them to cool slightly before serving.

Notes

  • Make sure not to overfill the pastry squares to prevent filling from leaking during baking.
  • You can prepare the filling in advance and refrigerate it before assembling the pies.
  • Use a fork or a pastry crimper to ensure the edges are well sealed.
  • For a dairy-free version, substitute cheese with a vegan alternative or omit it.
  • These hand pies can be frozen after assembly and baked later; just increase baking time slightly.
