Instructions

  1. Preheat Oven: Preheat your oven to 425°F (220°C). Line a large baking sheet with parchment paper to prepare for baking.
  2. Roll and Cut Dough: Remove the pizza dough from the package and place it on a clean cutting board. Roll it out with a rolling pin into a rectangle about ¼-inch thick. Use a pizza cutter to cut the dough lengthwise in half, then cut each half into twelve 1-inch strips, making a total of 24 strips.
  3. Wrap Sausages: Place one cocktail sausage on each dough strip. Tightly roll the dough around the sausage until fully wrapped.
  4. Prepare Baking Soda Bath: In a medium saucepan over medium heat, bring 5 cups of water to a light boil. Add the ¼ cup of baking soda and stir until dissolved.
  5. Boil Wrapped Sausages: Working in batches of 3 to 4, carefully lower the wrapped sausages into the boiling baking soda water. Boil each batch for 20 to 30 seconds. Then, use a slotted spoon to remove them and place onto the prepared baking sheet.
  6. Egg Wash and Salt: Brush the top of each dough-wrapped sausage with the beaten egg to give a shiny finish. Sprinkle evenly with kosher salt for flavor and texture.
  7. Bake: Place the baking sheet in the preheated oven and bake for 15 to 18 minutes, or until the dough turns a deep golden brown color.
