Vegan Cajun Mayonnaise

  • 0.5 cup vegan mayonnaise
  • 1 tbsp Cajun seasoning (adjust to taste)
  • 1 tsp lemon juice
  • 0.5 tsp smoked paprika

Instructions

  1. Preheat oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper to prevent sticking and ensure even cooking.
  2. Slice potatoes: Place each baby potato between two chopsticks or wooden spoons to create a guard, then slice thinly without cutting all the way through. This technique creates accordion-like slices that get crispy on the edges while staying tender inside.
  3. Season potatoes: In a small bowl, mix the olive oil, smoked paprika, garlic powder, onion powder, sea salt, and black pepper. Brush this flavorful mixture generously over each potato, ensuring the spices get into the slices for maximum flavor.
  4. Bake potatoes: Arrange the potatoes on the prepared baking sheet and bake for 35–40 minutes until golden brown and crispy. Halfway through baking, brush the potatoes again with the seasoned oil to keep them moist and flavorful.
  5. Prepare Cajun mayo: While the potatoes bake, whisk together the vegan mayonnaise, Cajun seasoning, lemon juice, and smoked paprika in a small bowl until smooth and well combined. Adjust seasoning to taste.
  6. Serve: Once the potatoes are crispy and cooked through, remove them from the oven, sprinkle with fresh chopped parsley for brightness, and serve hot with the Cajun mayo on the side for dipping.
