  • 1/2 teaspoon dried basil

  • 68 fresh basil leaves (shredded)

Liquids and Tomato Base

  • 1 can (14 oz / 400g) crushed tomatoes
  • 1 cup tomato sauce
  • 1 teaspoon sugar
  • 4 cups chicken stock

Cheese

  • 4 oz mozzarella cheese (grated)

Instructions

  1. Brown the Sausage: Heat the olive oil in a large pot over medium heat. Add the Italian sausage, breaking it up with a spoon, and cook until browned and cooked through.
  2. Sauté Vegetables: Add the diced onion and green bell pepper to the pot and sauté for a few minutes until the vegetables soften and become translucent.
  3. Add Aromatics and Herbs: Stir in the finely diced garlic, dried oregano, dried basil, and dried marjoram. Cook for another minute until the mixture becomes fragrant, releasing the flavors.
  4. Add Tomato and Stock Base: Pour in the crushed tomatoes, tomato sauce, and chicken stock. Add the sugar and quartered pepperoni. Stir well to combine all ingredients. Bring to a boil, then reduce heat and let it simmer gently for 10 minutes to meld the flavors.
  5. Finish with Fresh Basil and Season: Stir in the shredded fresh basil leaves and season with salt and freshly ground black pepper to your taste, adjusting as needed.
  6. Serve with Mozzarella: Ladle the hot soup into bowls and top each serving with grated mozzarella cheese. Allow the cheese to melt for a couple of minutes before serving for a gooey, delicious finish.
