Ingredients

Scale

Base

  • 2/3 cup peanut butter
  • 3/4 cup old fashioned (rolled) oats
  • 2 tbsp maple syrup

Topping

  • 1 tbsp peanut butter (per oat cup) OR 1/2 cup peanut butter mixed with 3 tbsp protein powder
  • 1 cup chocolate chips (melted)
  • Flaky sea salt (optional)

Instructions

  1. Mix Peanut Butter and Maple Syrup: In a bowl, combine 2/3 cup peanut butter with 2 tablespoons of maple syrup until thoroughly blended, creating a smooth, sweet base.
  2. Add Oats: Stir in 3/4 cup old fashioned rolled oats into the peanut butter mixture, mixing well to ensure even distribution of the oats throughout the base.
  3. Form Base Cups: Spoon about 2 tablespoons of the oat mixture into each cavity of silicon molds, pressing down evenly with a spoon or a cookie scoop to form a compact and firm base layer for each cup.
  4. Prepare and Add Topping: Choose either to top each base with a dollop of plain peanut butter (around 1 tablespoon per cup) or mix 1/2 cup peanut butter with 3 tablespoons of protein powder until smooth and spread this protein peanut butter mix on top. Then, place the molds in the freezer for 20 minutes to set.
  5. Melt Chocolate: While the cups freeze, melt 1 cup of chocolate chips in the microwave with about 2 teaspoons of oil. Heat in 30-second bursts, stirring thoroughly between intervals to achieve a smooth melted chocolate.
  6. Top with Chocolate and Freeze: Remove the oat cups from the freezer, pour the melted chocolate over each cup’s top layer evenly, and return the molds to the freezer for another 20 minutes to solidify the chocolate layer.
  7. Finish and Serve: Once fully frozen, carefully remove the peanut butter oat cups from their liners, sprinkle with flaky sea salt if desired, and enjoy your delicious homemade snack!

Notes

  • Use silicon molds for easy removal of the cups after freezing.
  • For a dairy-free option, use dairy-free chocolate chips.
  • Customize sweetness by adjusting the amount of maple syrup.
  • Store leftover cups in an airtight container in the freezer for up to two weeks.
  • Add a teaspoon of coconut oil when melting chocolate for a smoother texture.
