Main Ingredients
- 2 Tablespoons unsalted butter
- 1 1/2 cups steel cut oats
- 3 cups water
- 2 cups milk
- 1 medium banana (mashed, preferably over-ripe)
- 1/4 cup brown sugar
- 1/2 cup creamy peanut butter
To Serve
- Extra brown sugar
- Additional peanut butter
- Banana slices
- A splash of milk
- Sauté the oats. Heat your Instant Pot using the sauté function. Add the unsalted butter and allow it to melt completely. Once melted, add the steel cut oats and stir continuously for about 2 minutes, toasting the oats lightly until fragrant.
- Mash the banana. Use a fork to mash the over-ripe banana until smooth, ensuring it will evenly incorporate into the oats.
- Add ingredients. Pour in the water, milk, mashed banana, and a pinch of salt into the Instant Pot with the toasted oats. Stir well to combine all ingredients evenly.
- Seal the Instant Pot to pressure cook. Close the lid securely and set the valve to the sealing position. Select the high-pressure setting and set the timer for 4 minutes. The Instant Pot will take approximately 8-10 minutes to reach pressure before cooking begins, and will beep when it starts.
- Do natural release. After the 4 minutes of cooking, allow the Instant Pot to release pressure naturally for about 10 minutes. If pressure remains after that, carefully release the remaining pressure manually.
- Add brown sugar and peanut butter. Open the lid and immediately stir in the brown sugar and creamy peanut butter until well incorporated, creating a rich and smooth oatmeal.
- Serve. Serve the peanut butter banana steel cut oats warm, topped with extra brown sugar, additional peanut butter, fresh banana slices, and a splash of milk to your preference.
Notes
- Use over-ripe bananas for maximum sweetness and better mashing consistency.
- If you prefer a thinner consistency, add more milk or water during serving.
- This recipe is best enjoyed immediately but can be refrigerated for up to 3 days and reheated with a splash of milk.
- You can substitute dairy milk with any plant-based milk for a dairy-free version.
- Adjust brown sugar quantity to taste or substitute with maple syrup or honey for variation.
