Peanut Butter Layer

  • 8 oz cream cheese
  • 2/3 cup creamy peanut butter
  • 1/2 cup Swerve Confectioners
  • 1 tsp vanilla extract
  • 2 tbsp whipping cream (to fold in)

Chocolate Pudding Layer

  • 1 1/4 cup heavy whipping cream
  • 3/4 cup unsweetened almond milk
  • 3 tbsp Swerve Confectioners
  • 3 tbsp granular allulose
  • 1 large egg
  • 2 large egg yolks
  • 6 tbsp cocoa powder
  • 1/2 tsp glucomannan
  • 3 tbsp butter
  • 1/2 tsp vanilla extract

Topping

  • 2.25 oz HighKey brownie bites, crushed

Instructions

  1. Prepare the crust: In a mixing bowl, combine almond flour, cocoa powder, Swerve Confectioners, and salt. Stir in the melted butter until the mixture is well combined and holds together. Press this mixture evenly into the bottom of a 9-inch springform pan to form the crust. Set aside.
  2. Make the peanut butter layer: Whip 1/2 cup of whipping cream until stiff peaks form. In a separate bowl, beat the cream cheese until smooth and creamy. Add the peanut butter, 1/2 cup Swerve Confectioners, and vanilla extract, mixing well. Gently fold in the remaining 2 tbsp of whipping cream to lighten the mixture. Spread this peanut butter cream evenly over the prepared crust. Chill in the refrigerator while preparing the next layer.
  3. Prepare the chocolate pudding layer: In a saucepan, heat the heavy whipping cream and unsweetened almond milk over medium heat until it starts to simmer. In a separate bowl, whisk together the egg and egg yolks. Temper the eggs by slowly adding the hot cream mixture into the eggs while whisking constantly to prevent curdling. Pour this combined mixture back into the saucepan. Add cocoa powder and whisk continuously over medium heat until the mixture thickens into a pudding-like consistency. Stir in glucomannan, butter, and vanilla extract until fully incorporated.
  4. Assemble and chill: Allow the chocolate pudding layer to cool slightly before spreading it over the peanut butter layer in the springform pan. Top with crushed HighKey brownie bites evenly over the surface. Refrigerate the assembled cake for at least 3 hours to set and firm up.
