  • 1 teaspoon kosher salt
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon coarse black pepper

Instructions

  1. Preheat: Preheat your oven to 350°F (175°C) and set the oven rack in the middle position. Line a rimmed baking sheet with aluminum foil for easy cleanup.
  2. Prepare Cheese: Cut 8 ounces of fresh mozzarella into small cubes and place them in the fridge while you prepare the meat mixture.
  3. Make Meat Mixture: In a large bowl, beat 2 large eggs. Add 1 cup almond flour, 2 tablespoons Worcestershire sauce, 2 teaspoons onion powder, 1 teaspoon kosher salt, 1/2 teaspoon garlic powder, and 1/2 teaspoon coarse black pepper. Mix until combined. Add 2 pounds of ground meat and gently mix with your hands just until combined, being careful not to overwork the mixture.
  4. Form Loaf: Take about two-thirds of the meat mixture and place it on the foil-lined baking sheet. Shape it roughly into a 9×5-inch loaf. Create a hollow center approximately 7×3 inches in size, leaving a 1-inch border of meat all around.
  5. Add Cheese & Seal: Spoon the diced mozzarella into the hollow in the meat loaf, spreading it evenly. Cover the cheese with the remaining meat mixture, pressing down firmly to seal the cheese completely inside.
  6. Bake: Place the meat loaf in the preheated oven and bake for 55 to 60 minutes, or until the exterior is nicely browned and the internal temperature reaches at least 165°F (74°C) when checked with a meat thermometer.
  7. Rest & Serve: Remove the meatloaf from the oven and let it rest for 15 minutes. This allows the juices to redistribute and prevents the cheese from spilling out upon slicing. Serve warm.
