Ingredients

Scale

Turkey and Seasonings

  • lb ground turkey
  • 1 tsp salt
  • 1 tsp pepper
  • 1 tsp chili powder
  • 1 tsp oregano
  • ½ tsp paprika
  • 1 tsp onion powder
  • ½ tsp basil
  • 2 tsp garlic

Vegetables and Seasonings

  • ½ yellow onion, chopped
  • 2 zucchini, sliced
  • 2 bell peppers, sliced
  • 1 tsp garlic salt
  • ½ tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp oregano
  • ½ tsp basil
  • ½ tsp chili powder
  • ¼ tsp paprika

Other Ingredients

  • 6 oz tomato paste
  • ½ cup water
  • 1 tbsp olive oil
  • Parmesan cheese, optional topping

Instructions

  1. Brown the ground turkey: In a large saucepan over medium-high heat, cook the ground turkey until browned. Drain any excess water or fat. Add salt, pepper, chili powder, oregano, paprika, onion powder, basil, and garlic to the turkey, stirring well to combine. Remove the seasoned turkey from the saucepan and set aside.
  2. Sauté onions and garlic: Drizzle 1 tablespoon of olive oil into the same pan. Add the chopped yellow onion and garlic, cooking for about 3 minutes until fragrant and softened.
  3. Cook the vegetables: Add the sliced zucchini and bell peppers to the pan. Cook for 2 to 3 minutes. Then sprinkle garlic salt, garlic powder, onion powder, oregano, basil, chili powder, and paprika over the veggies. Continue cooking until the vegetables reach your desired tenderness, about 5 additional minutes.
  4. Combine turkey and tomato paste: Return the seasoned ground turkey to the skillet with the vegetables. Turn the heat down to medium-low. Stir in the tomato paste and ½ cup of water until well mixed. Let the mixture simmer for approximately 5 minutes to meld flavors and thicken the sauce.
  5. Serve: Optionally top with Parmesan cheese if not avoiding dairy. Serve warm with garlic bread or over rice for a complete and satisfying meal.

Notes

  • For a dairy-free version, omit the Parmesan cheese topping.
  • You can substitute other vegetables such as mushrooms or spinach based on preference.
  • Adjust seasoning quantities to taste, especially if you prefer less spice.
  • Cooking times may vary slightly depending on stove heat and pan type.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
