Instructions

  1. Warm the Milk: Heat 2 cups of milk in 30-second increments in the microwave or warm on the stovetop until it reaches a temperature between 100°F to 110°F, ensuring the milk is warm but not hot to activate the yeast.
  2. Combine Ingredients: In the bowl of a stand mixer fitted with a dough hook, add the warm milk, instant dry yeast, sugar, salt, softened butter, eggs, and 5 1/2 cups of the flour.
  3. Knead the Dough: Start mixing on low speed until the flour is incorporated, then increase to medium speed. Gradually add the remaining 1/2 cup flour, kneading until the dough pulls away from the bowl sides and feels slightly sticky and soft.
  4. First Rise: Transfer dough to a lightly greased large bowl, cover with towel or plastic wrap, and let rise in a warm place for about 90 minutes or until doubled in size.
  5. Shape the Rolls: Prepare greased baking sheets or pans. Punch down the risen dough and divide into 24 equal pieces. Shape each piece into smooth round balls by rolling them between your palm and a clean countertop for 30 to 45 seconds.
  6. Second Rise: Arrange the dough balls spaced evenly on the baking pans, cover again, and allow them to rise until doubled in size, about 1 hour.
