Ingredients

Scale

Pizza Base

  • 1 pre-made pizza crust (store-bought or homemade)

Roasted Garlic Sauce

  • 1 medium head of garlic
  • 1 tablespoon olive oil (for roasting garlic)
  • 1 cup ricotta cheese
  • ½ cup mozzarella cheese (half of the total), shredded
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Spinach Topping

  • 1 cup fresh spinach, chopped
  • 1 tablespoon olive oil (for sautéing spinach)
  • Salt and pepper to taste

Cheese Toppings

  • ½ cup mozzarella cheese (remaining), shredded
  • ½ cup feta cheese, crumbled
  • ¼ cup grated Parmesan cheese

Optional and Garnish

  • 1 teaspoon crushed red pepper flakes (optional)
  • Fresh basil leaves for garnish

Instructions

  1. Roast the Garlic: Preheat your oven to 400°F (200°C). Slice off the top of the garlic head to expose the cloves, drizzle with 1 tablespoon olive oil, then wrap it tightly in aluminum foil. Roast in the oven for 30-35 minutes until the garlic is soft and caramelized. Allow to cool slightly, then squeeze the roasted garlic cloves out into a bowl.
  2. Prepare the Spinach: Heat 1 tablespoon of olive oil in a skillet over medium heat. Add the chopped spinach and sauté until it wilts, about 2-3 minutes. Season with salt and pepper to taste, then remove from heat and set aside.
  3. Make the White Sauce: Mash the roasted garlic in the bowl until smooth. Add the ricotta cheese, half of the shredded mozzarella, dried oregano, and a pinch of salt and pepper. Mix thoroughly until all ingredients are well combined, creating a creamy garlic-ricotta sauce.
  4. Assemble the Pizza: Spread the roasted garlic-ricotta mixture evenly over the pizza crust. Layer the sautéed spinach evenly on top, followed by the remaining shredded mozzarella cheese and crumbled feta. Sprinkle crushed red pepper flakes if desired for a spicy kick.
  5. Bake the Pizza: Place the assembled pizza onto the preheated oven rack and bake for 15-20 minutes, or until the crust is golden brown and the cheeses are bubbly and slightly browned on top.
  6. Finishing Touches: Remove the pizza from the oven and allow it to cool for a few minutes. Garnish with fresh basil leaves before slicing and serving to add a fresh and aromatic finish.

Notes

  • Make sure to use fresh spinach and cook it just until wilted to retain vibrant color and flavor.
  • Adjust the amount of crushed red pepper flakes according to your spice preference or omit if you prefer a milder flavor.
  • Using a pre-made crust speeds up preparation, but a homemade dough can elevate the flavor and texture.
  • Leftover roasted garlic can be stored in the fridge for up to a week and used in other recipes.
  • For a gluten-free version, substitute the pizza crust with a gluten-free crust option.
