Egg Loaf:
- 8 ounces Cream Cheese (softened)
- 7 large Eggs
- 1/4 cup Heavy Whipping Cream
- 4 tbsp Butter (melted)
- 1 tsp Vanilla Extract
- 1/3 cup Swerve Confectioner’s Sugar Substitute
- 2 tsp Baking Powder
- 1/3 cup Coconut Flour
French Toast Batter:
- 2 large Eggs
- 3 tbsp Heavy Whipping Cream
- 1 tsp Vanilla Extract
- 1/2 tsp Cinnamon
- 1 pinch Nutmeg
- Preheat and Prepare Pan: Preheat the oven to 350 degrees F (175 degrees C) and grease a loaf pan thoroughly to prevent sticking.
- Beat Cream Cheese: In a mixing bowl, beat the softened cream cheese until smooth and creamy, ensuring no lumps remain.
- Mix Egg Loaf Batter: Add the remaining egg loaf ingredients (7 eggs, heavy whipping cream, melted butter, vanilla extract, Swerve, baking powder, and coconut flour) to the bowl with the cream cheese and blend well until the batter is completely smooth and uniform.
- Bake the Loaf: Pour the batter into the prepared loaf pan and bake for 50 to 55 minutes. Watch for the top to brown and tent with foil if it gets too dark to prevent burning.
- Cool and Remove Loaf: Remove the loaf from the oven and allow it to cool to room temperature. Once cooled, carefully turn the loaf out of the pan onto a cutting surface.
- Slice Loaf: Cut the egg loaf into 8 even slices to serve as your french toast base.
- Prepare French Toast Mixture: In a shallow bowl, whisk together 2 eggs, heavy whipping cream, vanilla extract, cinnamon, and a pinch of nutmeg until combined.
- Dip Slices: Dip each egg loaf slice into the french toast batter, coating both sides thoroughly but not soaking too long to avoid sogginess.
- Heat Skillet: Place a large skillet over medium heat and spray with cooking spray or lightly grease with butter to prevent sticking.
- Cook French Toast: Add the coated egg loaf slices to the skillet and cook evenly on each side until browned and crispy, about 2-3 minutes per side.
- Serve: Serve immediately topped with butter, sugar-free syrup, or your favorite toppings.
Notes
- Use full-fat cream cheese and heavy cream for best texture and flavor.
- Do not over-soak the egg loaf slices in the french toast mixture to keep them from falling apart.
- If you prefer, substitute the coconut flour with almond flour but note the texture may change slightly.
- Sprinkling powdered sugar substitute on top before serving adds a nice touch.
- This recipe is gluten-free and low in carbs, suitable for keto or low-carb diets.
