Ingredients

Scale

Main Ingredients

  • 1 tablespoon vegetable oil, divided
  • 2 1/2 cups green beans, trimmed and cut into 1-inch pieces
  • 1 pound boneless, skinless chicken breasts, cut into 1-inch chunks
  • 2 teaspoons minced garlic
  • 1/4 cup low-sodium chicken broth (or water)
  • 1/4 cup soy sauce
  • 3 tablespoons honey
  • 2 teaspoons corn starch
  • Salt and pepper, to taste

Instructions

  1. Cook the Green Beans: Heat 1 teaspoon of vegetable oil in a large pan over medium heat. Add the green beans and cook for 3-4 minutes or until they are tender but still crisp. Remove the green beans from the pan and place them on a plate. Cover them to keep warm.
  2. Cook the Chicken: Wipe the pan clean with a paper towel and increase the heat to high. Add the remaining tablespoon of oil. Season the chicken pieces with salt and pepper, then add them in a single layer. Cook in batches if needed, frying each piece for 3-4 minutes on each side until golden brown and cooked through. Add the minced garlic to the pan and cook an additional 30 seconds to release the flavor.
  3. Combine Chicken and Green Beans: Return the cooked green beans to the pan with the chicken. Cook together for 2 minutes, stirring occasionally until the beans are warmed through.
  4. Prepare the Sauce: In a bowl, whisk together the chicken broth, honey, and soy sauce. In a separate small bowl, mix the cornstarch with 1 tablespoon of cold water until smooth to create a slurry.
  5. Finish the Dish: Pour the soy sauce mixture over the chicken and green beans in the pan. Cook for 30 seconds while stirring to evenly coat the ingredients. Slowly whisk in the cornstarch slurry and bring the mixture to a boil. Cook for 1 more minute, stirring constantly, until the sauce thickens slightly.
  6. Serve: Serve immediately, optionally with steamed rice for a complete meal. Enjoy the flavorful and healthy chicken and green bean stir-fry!

Notes

  • For a gluten-free version, substitute the soy sauce with tamari.
  • Make sure not to overcook the green beans to keep them crisp and vibrant.
  • Use low-sodium chicken broth to control salt content.
  • Cooking chicken in batches ensures even browning and prevents overcrowding.
  • Adjust honey quantity if you prefer a sweeter or less sweet sauce.
  • Serve with steamed rice or quinoa for a satisfying complete meal.
