Garlic Butter Sauce

  • 2 tbsp olive oil
  • 4 tbsp butter, melted
  • 3 cloves garlic, minced
  • 1 tsp fresh thyme, chopped (or ½ tsp dried)
  • 1 tsp fresh rosemary, chopped (or ½ tsp dried)
  • ½ tsp paprika
  • Salt & black pepper, to taste

Instructions

  1. Preheat and Prep: Preheat your oven to 400°F (200°C) or prepare your grill to medium-high heat. Cut 4 large sheets of heavy-duty aluminum foil, about 12–14 inches each, to prepare for assembling foil packets.
  2. Make the Garlic Butter: In a small bowl, combine the melted butter, minced garlic, chopped thyme, rosemary, paprika, olive oil, salt, and black pepper. Mix well and set aside to let the flavors meld.
  3. Assemble the Foil Packets: Divide the halved baby potatoes evenly among the foil sheets and drizzle with a portion of the garlic butter mixture. Then layer the cubed steak on top of the potatoes. Drizzle additional garlic butter over the steak for full flavor. Optionally, add sliced bell peppers and onions for extra color and taste.
  4. Seal the Packets: Bring the edges of each foil sheet together and fold tightly to seal, leaving a small space inside for air circulation and even cooking while preventing leaks.
  5. Cook: For oven method, place foil packets on a baking sheet and bake for 20–25 minutes until potatoes are tender and steak is cooked to your liking. For grilling, place packets directly on medium-high grill grates and cook for 12–15 minutes, flipping halfway through. For campfire cooking, place packets over medium-hot coals and cook for 15–20 minutes, flipping occasionally to ensure even cooking.
  6. Serve: Carefully open the foil packets, being cautious of hot steam. Garnish with freshly chopped parsley and grated Parmesan cheese if desired. Serve directly from the foil packets for easy cleanup and enjoy your flavorful meal.
