Ingredients

Scale

Shrimp

  • 1 pound medium raw shrimp, deveined and peeled, tails on or off
  • Salt to taste
  • Freshly ground black pepper to taste
  • 1 tablespoon neutral oil (avocado oil, olive oil, refined coconut oil, etc.)

Sauce

  • 2 tablespoons butter
  • 4 cloves garlic, minced
  • ½ cup dry white wine
  • 1 cup heavy cream, at room temperature
  • ½ teaspoon salt, more or less to taste
  • ¼ teaspoon freshly ground black pepper, more or less to taste
  • ¾ cup grated fresh Parmesan, at room temperature
  • Finely chopped fresh parsley to taste

Serving Suggestions

  • Mashed potatoes, mashed cauliflower, or mashed Palmini
  • Prepared pasta of choice or prepared Palmini
  • Rice or cauliflower rice

Instructions

  1. Season the shrimp: Lay out your shrimp on a cutting board in a single layer and sprinkle with salt and pepper. Flip them over and repeat on the other side to ensure even seasoning. This simple step is crucial for enhancing the shrimp’s flavor.
  2. Heat your skillet: Heat a large skillet over medium-high heat and add 1 tablespoon of neutral oil such as olive oil, avocado oil, or refined coconut oil. Swirl the pan to coat evenly. When the oil is shimmering, proceed to cook the shrimp.
  3. Cook the shrimp: Place the shrimp in a single layer in the hot skillet. Let them cook undisturbed for 1-2 minutes until they turn pink and begin to curl slightly. Flip the shrimp and cook for another minute until they form a “J” shape and are fully opaque. Remove the shrimp from the skillet and set aside in a bowl.
  4. Make the garlic sauce: Lower the heat to medium and add 2 tablespoons of butter to the same skillet. Once melted, add the minced garlic and sauté for about 30 seconds until fragrant but not browned. Watch closely to prevent burning.
  5. Deglaze with wine: Pour in ½ cup of dry white wine and stir to deglaze the pan, scraping up any browned bits from cooking the shrimp and garlic. Allow the wine to reduce by half, about 2-3 minutes, concentrating the flavors.
  6. Add the cream and cheese: Reduce the heat to medium-low and pour in 1 cup of heavy cream, stirring to combine. Season with ½ teaspoon salt and ¼ teaspoon pepper, then add ¾ cup grated Parmesan cheese. Stir continuously until the cheese melts and the sauce starts to thicken.
  7. Finish the dish: Stir in chopped fresh parsley, then return the cooked shrimp to the pan. Toss gently to coat the shrimp evenly with the creamy garlic Parmesan sauce. Serve immediately over mashed potatoes, pasta, rice, or your choice of side.

Notes

  • Use dry white wine such as Sauvignon Blanc or Pinot Grigio for deglazing; if you prefer, substitute with chicken broth or omit for a non-alcoholic option.
  • For a lighter version, substitute heavy cream with half-and-half but expect a slightly thinner sauce.
  • Serve over various bases like mashed cauliflower for a low-carb meal or traditional pasta for a classic experience.
  • Be cautious when cooking garlic to avoid burning, which can impart bitterness to the sauce.
  • Parmesan cheese at room temperature incorporates more smoothly into the sauce.
