Instructions

  1. Prepare Chicken: Cut each chicken breast in half lengthwise to create 4 thinner cutlets. Season generously with salt and pepper, then coat each piece evenly with flour to prepare for sautéing.
  2. Sauté Chicken: Heat the olive oil and 1 tablespoon of butter in a skillet over medium-high heat. Once hot, add the chicken cutlets and cook for 4-5 minutes on each side or until golden brown. Remove the chicken from the pan and set aside.
  3. Cook Garlic: Lower the heat to medium (or medium-low if using cast iron). Add the remaining tablespoon of butter to the pan and let it melt. Add the peeled garlic cloves and cook for 3-4 minutes, stirring frequently, until the garlic is lightly browned on the outside.
  4. Deglaze Sauce: Pour in the chicken broth, add lemon juice and garlic powder. Let the mixture simmer and bubble for around 4 minutes or until the liquid has reduced noticeably, concentrating the flavors.
  5. Add Cream and Finish Cooking: Stir in the heavy cream and return the chicken to the pan. Continue cooking for about 5 minutes until the sauce thickens and the chicken is fully cooked through.
  6. Serve: Garnish with freshly chopped parsley if desired and serve immediately with your choice of sides.
