Ingredients

Scale

Meat & Aromatics

  • 1 lb Italian sausage (mild or spicy)
  • 1 small onion, diced
  • 3 cloves garlic, minced

Vegetables & Greens

  • 4 cups potatoes, diced (Yukon Gold or Russet)
  • 2 cups kale or spinach, chopped

Liquids & Seasonings

  • 4 cups chicken broth
  • 1 cup heavy cream (or half-and-half for a lighter option)
  • ½ tsp salt (adjust to taste)
  • ½ tsp black pepper
  • ¼ tsp crushed red pepper flakes (optional)
  • 1 tbsp olive oil (if needed, for sautéing)

Garnish

  • ½ cup grated Parmesan cheese

Instructions

  1. Cook the Sausage & Aromatics: Heat a large pot or Dutch oven over medium heat. Add the Italian sausage and cook until browned, breaking it apart with a spoon. Drain excess grease if necessary. Add the diced onion and sauté for 3–4 minutes until softened. Stir in the minced garlic and cook for 30 seconds until fragrant.
  2. Simmer the Potatoes: Add the diced potatoes and chicken broth to the pot. Bring the mixture to a boil, then reduce the heat to low and simmer for 15 minutes or until the potatoes are fork-tender.
  3. Finish with Cream & Greens: Stir in the heavy cream and chopped kale or spinach. Let the soup simmer for an additional 5 minutes until the greens have wilted. Season with salt, black pepper, and crushed red pepper flakes if using.
  4. Serve & Enjoy: Ladle the soup into bowls and garnish with grated Parmesan cheese. Serve warm with crusty bread for a complete and comforting meal.

Notes

  • You can substitute half-and-half for heavy cream to reduce calories and fat.
  • For a spicier soup, use spicy Italian sausage and add more crushed red pepper flakes.
  • Use kale for a heartier texture or spinach for a milder flavor.
  • Leftover soup keeps well in the refrigerator for up to 3 days and can be frozen for longer storage.
  • To make it gluten-free, ensure the Italian sausage and chicken broth are certified gluten-free.
