Instructions

  1. Prepare the Frozen Yogurt Mixture: Add the non-dairy yogurt, protein powder, cashew butter, vanilla extract, and maple syrup into a mixing bowl. Stir well until all ingredients are combined smoothly. Then fold in the mini chocolate chips evenly.
  2. Scoop the Mixture: Line a baking sheet with parchment paper. Using a medium-large cookie scoop or spoon, dollop spoonfuls of the frozen yogurt mixture onto the parchment, spacing them slightly apart.
  3. Freeze the Bites: Place the baking sheet in the freezer and freeze the dollops for at least 1 hour or until they are completely solid.
  4. Melt Chocolate Coating: In a microwave-safe bowl or using a double boiler, melt together the chocolate chips and coconut oil until smooth and fully combined.
  5. Dip and Coat: Remove the frozen yogurt bites from the freezer. Quickly dip each bite into the melted chocolate, coating it completely, then place back onto the parchment-lined baking sheet.
