Frozen Yogurt Mixture
- 1 cup non-dairy yogurt (plain and unsweetened)
- 2 tablespoons protein powder (optional)
- 1/4 cup cashew butter (or any nut/seed butter)
- 1 teaspoon vanilla extract
- 2 tablespoons maple syrup (or honey)
- 1 1/2 cups mini chocolate chips
Chocolate Coating
- 1 1/2 cups chocolate chips
- 2 tablespoons coconut oil
- Prepare the Frozen Yogurt Mixture: Add the non-dairy yogurt, protein powder, cashew butter, vanilla extract, and maple syrup into a mixing bowl. Stir well until all ingredients are combined smoothly. Then fold in the mini chocolate chips evenly.
- Scoop the Mixture: Line a baking sheet with parchment paper. Using a medium-large cookie scoop or spoon, dollop spoonfuls of the frozen yogurt mixture onto the parchment, spacing them slightly apart.
- Freeze the Bites: Place the baking sheet in the freezer and freeze the dollops for at least 1 hour or until they are completely solid.
- Melt Chocolate Coating: In a microwave-safe bowl or using a double boiler, melt together the chocolate chips and coconut oil until smooth and fully combined.
- Dip and Coat: Remove the frozen yogurt bites from the freezer. Quickly dip each bite into the melted chocolate, coating it completely, then place back onto the parchment-lined baking sheet.
- Final Freeze: Return the coated bites to the freezer for at least 30 minutes or until the chocolate coating has hardened.
- Serve and Store: Enjoy immediately by taking one out from the freezer or store them in an airtight container in the freezer for later snacking.
Notes
- Use any nut or seed butter of your choice if cashew butter is unavailable.
- Protein powder is optional but adds extra protein and helps with texture.
- For a dairy-free and vegan option, ensure the chocolate chips and yogurt are non-dairy and vegan certified.
- Make sure the yogurt bites are fully frozen before dipping into chocolate to avoid melting.
- Store the frozen yogurt bites in the freezer to maintain texture and freshness.
- You can substitute maple syrup with honey if not strictly vegan.
