Instructions

  1. Cook Potatoes: Use a fork to poke holes all over one large sweet potato (or two smaller ones). Place in the microwave and cook until the skin begins to wrinkle and the potato is easily pierced with a fork, about 8 to 10 minutes. Let stand at room temperature until easy to handle, approximately 10 minutes.
  2. Mash Potato: When cool enough to handle, remove the skins from the sweet potatoes and add the flesh to a mixing bowl. Add the melted butter and brown sugar, then mash together using a fork or hand mixer until well combined.
  3. Add Remaining Wet Ingredients: Incorporate the egg, buttermilk, and vanilla extract into the sweet potato mixture. Mix until smooth and fully blended.
  4. Add Dry Ingredients: Sift or add the all-purpose flour, baking soda, ground cinnamon, pumpkin pie spice, and kosher salt to the wet mixture. Mix gently until just combined to avoid overmixing.
  5. Prepare Pan and Add Batter: Preheat the oven to 350°F (175°C). Coat a loaf pan with baking spray and pour in the batter, spreading it evenly throughout the pan.
  6. Bake: Place the pan in the oven and bake for 38 to 42 minutes or until a toothpick inserted into the center comes out clean. Once done, remove it from the oven and let it rest in the pan for 10 minutes.
