  • 2 pounds Boneless Skinless Chicken Thighs, cut into pieces

Marinade

  • 1/3 cup Red Onion, finely chopped
  • 2 tbsp Olive Oil
  • 1 Chipotle Pepper in Adobo Sauce, chopped
  • 2 tbsp Adobo Sauce
  • 2 tsp Minced Garlic
  • 1/2 tsp Cumin
  • 1 tsp Oregano
  • 3 tsp Ancho Chili Powder

Instructions

  1. Combine ingredients: Place the chicken pieces into a large mixing bowl. Add the finely chopped red onion, olive oil, chopped chipotle pepper, adobo sauce, minced garlic, cumin, oregano, and ancho chili powder to the bowl.
  2. Mix and marinate: Toss all the ingredients together until the chicken is well coated with the marinade. Cover the bowl and refrigerate for 4 hours to let the flavors penetrate the meat.
  3. Prepare to bake: Preheat your oven to 400°F (204°C). Line a baking sheet with parchment paper or a silicone baking mat and spread the marinated chicken pieces out evenly on the sheet.
  4. Bake the chicken: Place the baking sheet in the preheated oven and bake the chicken for 20-30 minutes, or until the chicken is cooked through and juices run clear.
  5. Optional broil for crispiness: For extra crispy edges, switch your oven to broil and broil the chicken for 1-2 minutes, watching closely to avoid burning.
