Chicken
- 2 pounds Boneless Skinless Chicken Thighs, cut into pieces
Marinade
- 1/3 cup Red Onion, finely chopped
- 2 tbsp Olive Oil
- 1 Chipotle Pepper in Adobo Sauce, chopped
- 2 tbsp Adobo Sauce
- 2 tsp Minced Garlic
- 1/2 tsp Cumin
- 1 tsp Oregano
- 3 tsp Ancho Chili Powder
- Combine ingredients: Place the chicken pieces into a large mixing bowl. Add the finely chopped red onion, olive oil, chopped chipotle pepper, adobo sauce, minced garlic, cumin, oregano, and ancho chili powder to the bowl.
