Cheesesteak Tortellini Ingredients
- 12 oz fresh cheese tortellini
- 1 lb thinly sliced beef (flank or sirloin)
- 1 cup sliced bell peppers (red and green)
- 1 medium onion, sliced
- 8 oz cream cheese, softened
- 1 cup shredded provolone cheese
- 1 cup beef broth
- 2–3 cloves garlic, minced
- 1 tbsp olive oil
- Salt and pepper to taste
- Cook Tortellini: Bring a large pot of salted water to a boil. Add the fresh cheese tortellini and cook according to package instructions until al dente, about 3-4 minutes. Drain the tortellini and set aside.
- Sauté Vegetables: Heat the olive oil in a large skillet over medium heat. Add the sliced onions and bell peppers and sauté until they are tender and lightly caramelized, about 5-7 minutes. Remove the vegetables from the skillet and set aside.
- Cook Beef: In the same skillet, add the thinly sliced beef. Cook over medium-high heat until browned and fully cooked through, about 4-5 minutes. Season with salt and pepper to taste. Remove the beef from the skillet and set aside.
- Prepare Provolone Sauce: Lower the heat to medium and add the minced garlic to the skillet. Sauté briefly until fragrant, about 30 seconds. Pour in the beef broth and stir, then add the softened cream cheese. Stir until the cream cheese is melted and smooth. Gradually add the shredded provolone cheese, stirring continuously until fully melted and the sauce is creamy.
- Combine Ingredients: Return the cooked vegetables and beef to the skillet with the sauce. Stir well to coat everything evenly. Let the mixture simmer together for 2-3 minutes to blend the flavors.
- Toss Tortellini: Gently fold in the cooked tortellini into the skillet, ensuring the pasta is fully coated with the creamy cheesesteak sauce. Heat for another minute if needed. Serve hot as a satisfying and hearty meal.
Notes
- Use fresh tortellini for a better texture, but frozen works well too.
- Flank steak or sirloin thinly sliced is best for tenderness and flavor.
- Adjust the garlic amount based on your preference for pungency.
- Add a pinch of crushed red pepper flakes for a spicy kick.
- Serve with a side salad or garlic bread for a complete meal.
- Leftovers can be refrigerated in an airtight container for up to 3 days.
