  • 1 cup mozzarella cheese, shredded
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon fresh mint, chopped
  • 1 teaspoon lemon zest
  • Salt and pepper, to taste

Egg Wash

  • 1 egg, beaten
  • 1 tablespoon water

Instructions

  1. Mix dry ingredients: In a large bowl, combine the all-purpose flour, instant yeast, sugar, and salt. Toss together until evenly mixed to ensure proper dough consistency.
  2. Prepare the dough: Add olive oil and warm water to the dry ingredients. Knead the mixture until a smooth and elastic dough forms, adding a little more water if the dough feels too dry. Cover the dough and let it rise in a warm spot for about 1 hour or until it doubles in size.
  3. Make the cheese filling: In a separate bowl, mix the crumbled feta, shredded mozzarella, chopped parsley, chopped mint, lemon zest, salt, and pepper. This mixture should be well combined to distribute flavors evenly.
  4. Shape the dough: Once the dough has risen, punch it down and divide it into small equal-sized balls. Flatten each ball into a circle about 4-5 inches in diameter on a lightly floured surface.
  5. Fill the dough: Spoon a generous amount of the cheese filling into the center of each dough circle. Fold the dough edges over the filling to form a triangular shape, pinching the edges firmly to seal and prevent any filling from leaking out.
  6. Apply egg wash: Mix the beaten egg with a tablespoon of water and brush this egg wash over the tops of each fatayer to give a beautiful golden and glossy finish after baking.
