These Cheat Scallion Buns are a quick and delicious twist on traditional Chinese steamed buns, made easy with self-raising flour and Greek yoghurt. Filled with fresh spring onions, garlic, and mozzarella cheese, these fluffy buns are perfect steamed and optionally pan-fried for a golden crispy bottom, creating a delightful contrast in texture.

  • 200g self-raising flour
  • 170g Greek yoghurt (use vegan yoghurt for a plant-based version)

Filling

  • 4 spring onions, finely sliced
  • 4 garlic cloves, finely chopped
  • 2 tbsp grated mozzarella cheese

Instructions

  1. Prepare the dough: In a large bowl, combine the self-raising flour and Greek yoghurt. Stir in a clockwise motion until a rough dough forms. Transfer the dough onto a clean surface and knead gently for a couple of minutes until smooth. Cover with cling film and set aside while prepping other ingredients.
  2. Prepare filling ingredients: Finely slice the spring onions and garlic cloves and grate the mozzarella cheese. Set these aside for assembling the buns.
  3. Divide the dough: Take the rested dough and slice it into four equal portions for four buns.
  4. Roll out the dough: Flour a clean surface and roll out one dough piece to about 0.75cm thickness. Fold the two outer edges inward to form a thin rectangular strip, then roll it out again in one direction to keep it about 0.75cm thick. Trim the top and bottom edges to create a perfect rectangle.
  5. Add filling and shape buns: Drizzle olive oil over one side of the rectangle. Sprinkle the top half evenly with the finely sliced spring onions, garlic, and grated mozzarella. On the bottom half, slice vertical mini strips to create a lattice or pattern. Roll up the bun tightly from the filled side, enclosing the filling inside. Repeat for all dough pieces.
  6. Steam the buns: Place each bun on parchment paper and arrange them in a steamer basket. Steam over boiling water for 15-20 minutes or until the buns are fluffy and cooked through.
  7. Optional pan-fry for crispiness: For a crispy bottom, heat a non-stick pan on high heat and pan-fry each steamed bun for about 3 minutes until golden brown on the bottom. Serve warm and enjoy your delicious scallion buns!
