Ingredients

Scale

Vegetables and Aromatics

  • 4 large onions
  • ¼ cup chopped sundried tomatoes
  • Fresh chopped parsley, for garnish

Liquids and Oils

  • ⅓ cup olive oil
  • 1 cup heavy cream

Other Ingredients

  • 1 Tbsp chili crisp or chili crunch
  • ⅓ cup grated parmesan cheese
  • 1 lb linguine or buccatini, cooked al dente
  • Salt and pepper, to taste

Instructions

  1. Prepare the onions: Cut the onions in half and peel them. Thinly slice all the onions lengthwise and transfer them to a large pot or wide sauté pan. Pour in the ⅓ cup of olive oil and season with salt and pepper.
  2. Caramelize the onions: Set the pan over medium heat until the onions just start to sizzle. Reduce the heat to medium-low and cook, stirring every 5 to 7 minutes, for about 45 minutes or until the onions are deeply caramelized and reduced to about 1 ½ cups in volume.
  3. Add sundried tomatoes and chili crisp: Increase the heat to medium, then add the chopped sundried tomatoes and chili crisp to the pan. Stir well to combine the flavors.
  4. Create the cream sauce: Pour in the heavy cream and bring the mixture to a simmer over medium heat. Then add the grated parmesan cheese and reduce the heat back to medium-low to gently cook the cream sauce for 3 to 4 minutes, allowing it to thicken slightly.
  5. Toss pasta in sauce: Add the cooked linguine or buccatini to the pan and toss well to combine the pasta with the creamy onion sauce. Let it cook together for 1 more minute so the pasta absorbs the flavors.
  6. Serve and garnish: Plate the pasta and garnish with extra parmesan cheese and fresh chopped parsley for a fresh finish.

Notes

  • Cook the onions low and slow to develop a deep, rich caramelization without burning.
  • Use good quality olive oil and parmesan cheese for the best flavor.
  • Chili crisp adds a subtle spice and crunch; substitute with chili flakes if unavailable.
  • Reserve some pasta water before draining to adjust sauce consistency if needed.
  • This dish is best served immediately but can be reheated gently with a splash of cream or water.
