  • 2 spring onions, sliced (green part only)
  • ½ teaspoon of onion powder
  • Salt and black pepper to season

Instructions

  1. Heat the butter: Heat a frying pan over medium-high heat and add the butter to melt completely.
  2. Cook the onions: Add the thinly sliced onions to the pan and cook until they become translucent, stirring occasionally to prevent sticking.
  3. Caramelize with stock: Reduce heat to medium-low and gradually add the stock a little at a time, allowing it to reduce between additions. Cook slowly for about 25 minutes until onions are soft and deeply caramelized, being careful not to burn.
  4. Add balsamic and maple syrup: Stir in the balsamic vinegar and maple syrup to deepen the flavor and color. Remove the mixture from heat and set aside to cool.
  5. Blend cottage cheese: Using a mini food processor, blend the fat-free cottage cheese until smooth and lump-free for a creamy base.
  6. Combine ingredients: Transfer the blended cottage cheese to a bowl and fold in the cooled caramelized onions, sliced spring onions, and onion powder. Mix thoroughly to combine.
  7. Season the dip: Taste the dip and add salt and black pepper as needed to enhance the flavors.
