Ingredients

Scale

Main Ingredients

  • 7 cups Rice Chex Cereal (or store brand version)
  • 1 cup semi sweet chocolate chips
  • ½ cup creamy peanut butter
  • ¼ cup salted butter
  • 1 teaspoon pure vanilla extract
  • 18 fun size Butterfinger candy bars (15 crushed, 3 roughly chopped for garnish)
  • 1 ¼ cup powdered sugar (sifted)

Instructions

  1. Prepare the Cereal: Add the Rice Chex cereal to an extra large bowl, ensuring you have enough space to mix in all ingredients thoroughly.
  2. Melt the Chocolate Mixture: In a microwave-safe bowl, combine the semi sweet chocolate chips, creamy peanut butter, and salted butter. Microwave on high for 1 minute. Stir well until the mixture is completely melted and smooth.
  3. Add Vanilla Extract: Stir the pure vanilla extract into the melted chocolate mixture until fully incorporated for enhanced flavor.
  4. Coat the Cereal: Drizzle the chocolate peanut butter mixture over the Rice Chex cereal. Gently stir to evenly coat the cereal without breaking it.
  5. Add Crushed Butterfinger: Mix in the 15 crushed Butterfinger candy bars with the coated cereal, distributing them evenly throughout the mix.
  6. Coat with Powdered Sugar: To coat with powdered sugar, either sprinkle it over the coated cereal mix and stir, or transfer the coated cereal to a large 2-gallon ziplock bag, add the powdered sugar, close securely, and shake well until all pieces are evenly coated. The bag method helps contain the sugar and minimize mess.
  7. Dry and Garnish: Spread the powdered sugar coated cereal out on a baking sheet to dry. Just before serving, sprinkle the 3 roughly chopped fun size Butterfinger candy bars on top for an extra crunchy garnish.

Notes

  • Using a large bowl or ziplock bag is essential to mix the ingredients thoroughly without breaking the cereal.
  • If microwaving, watch the chocolate mixture carefully to prevent burning; stir midway if needed.
  • Sifting the powdered sugar ensures a smooth coating without clumps.
  • Store any leftovers in an airtight container to maintain crispness for up to 3 days.
  • For variation, try using peanut butter chips instead of chocolate chips for a different flavor profile.
