Ingredients

Scale

Cheese Mixture

  • 330g cream cheese (2 packs)
  • 150g goat cheese, rind removed
  • 200g brie, rind removed
  • 150g blue cheese, rind removed

Other Ingredients

  • 1 tbsp sugar
  • 2 tsp flaky salt
  • 1 tsp black pepper
  • 4 eggs
  • 300ml double cream
  • 2 tbsp all purpose flour
  • 2 red chillies, finely chopped
  • Butter (for greasing)
  • 1 baguette (to serve)

Instructions

  1. Preheat the Oven: Set your oven to 220°C (430°F) to ensure it reaches the right temperature for baking the cheesecake.
  2. Combine the Cheeses: In a large bowl, blend the cream cheese, goat cheese, brie, and blue cheese (all with rinds removed) using an electric whisk until the mixture is light, smooth, and fluffy.
  3. Add Seasonings: Stir in sugar, flaky salt, and black pepper evenly into the cheese mixture to balance the flavors.
  4. Incorporate Eggs: Crack four eggs one at a time into the mixture, whisking thoroughly after each to create a smooth, uniform batter.
  5. Mix Cream, Flour, and Chillies: Pour in the double cream, sprinkle the all-purpose flour, and add the finely chopped red chillies. Use a hand whisk to combine all ingredients until fully incorporated.
  6. Prepare Baking Dish: Butter a loaf baking dish on the base and sides. Line the dish with parchment paper, butter the parchment, then add a second overlapping piece of parchment at an angle and press down firmly to fit snugly.
  7. Pour Batter: Carefully transfer the cheese mixture into the prepared loaf dish, smoothing the surface.
  8. Bake: Place in the preheated oven and bake for approximately 45 minutes until the top of the cheesecake is golden brown and slightly burnt in characteristic Basque style.
  9. Cool and Set: Remove from the oven and let it cool at room temperature. Once cooled, refrigerate for at least 3 hours until the cheesecake sets firmly.
  10. Serve: Slice and enjoy chilled with fresh sliced baguette for a delightful savory appetizer.

Notes

  • Ensure all cheese rinds are removed for a smooth texture.
  • The burnt top is a signature characteristic of Basque cheesecake; don’t be alarmed by the darker color.
  • Chilling the cheesecake for at least 3 hours helps achieve the ideal firmness for slicing and serving.
  • Adjust red chilli amount to your preferred spice level.
  • Use parchment paper properly to prevent sticking and ease removal from the baking dish.
  • Serve chilled or at room temperature depending on preference.
