  • ½ cup diced yellow onion

  • 12 ounces tortilla chips (Tostitos brand, use about of the bag)

Instructions

  1. Preheat Oven: Preheat your oven to 450°F (232°C). Spray a 12-cup capacity bundt pan generously with cooking spray to prevent sticking and set it aside.
  2. Cook Ground Beef Mixture: In a large skillet over medium-high heat, add the lean ground beef, diced yellow onion, salt, and black pepper. Cook for 6 to 7 minutes until the beef is fully browned and no pink remains, stirring occasionally. Then drain any excess fat carefully.
  3. Season the Beef: Return the skillet to medium heat and stir in ¼ cup water and 2 tablespoons of taco seasoning. Cook for an additional 2 to 3 minutes, allowing the liquid to mostly evaporate, which helps the seasoning cling to the meat. Remove the skillet from heat after this step.
  4. Layer First Round: Begin layering in the prepared bundt pan. First, spread half of the shredded Colby jack cheese evenly at the bottom. Next, layer half of the cooked ground beef mixture over the cheese. Then add one-third of the tortilla chips on top, making sure not to pack them down so they stay crisp.
  5. Layer Second Round: Add the remaining shredded cheese over the chips, followed by the rest of the ground beef mixture. Finish this layer with another one-third of the tortilla chips spread evenly. Avoid overfilling; keep the layers level.
  6. Bake: Place the bundt pan in the preheated oven and bake for 10 minutes to melt the cheese and warm the ingredients through.
  7. Unmold the Nachos: Carefully remove the pan from the oven. Using a large heatproof plate, cover the top of the bundt pan and quickly invert the pan to transfer the layered nachos onto the plate. Gently lift off the bundt pan and if any cheese sticks inside the pan, replace it onto the nachos.
  8. Add Garnishes and Serve: Top the nachos with optional garnishes such as sour cream, diced tomatoes, and chopped fresh cilantro to add freshness and extra flavor. Serve immediately while warm for the best taste and texture.
