Ingredients

Scale

Shrimp Marinade

  • 1 pound fresh shrimp, peeled and deveined
  • 1 tablespoon olive oil
  • 1 tablespoon Cajun seasoning

Pasta

  • 6 ounces fettuccini pasta

Vegetables and Sauce

  • 1 tablespoon butter
  • 3 cups fresh mushrooms, sliced
  • 1 tablespoon chopped shallots
  • ⅔ cup chicken broth (plus 1 cup chicken broth for sauce)
  • ½ cup sour cream
  • 1 tablespoon cornstarch
  • 1 (7-ounce) jar roasted red bell peppers, drained and chopped
  • 1 tablespoon drained capers

Instructions

  1. Prepare the Shrimp: In a medium bowl, combine peeled shrimp with olive oil and Cajun seasoning. Toss until evenly coated and set aside to marinate while preparing other ingredients.
  2. Cook the Pasta: Bring a large pot of lightly salted water to a boil. Add fettuccini pasta and cook for 8 to 10 minutes until al dente. Drain and set aside.
  3. Sauté the Vegetables: Melt butter over medium heat in a large frying pan. Add sliced mushrooms and chopped shallots. Cook and stir until tender, then remove vegetables from pan and set aside.
  4. Cook the Shrimp: Using the same pan, add the seasoned shrimp and cook for 2 to 3 minutes until they turn pink. Remove shrimp from pan and set aside.
  5. Make the Sauce: Pour ⅔ cup chicken broth into the frying pan and bring to a boil. Cook uncovered until reduced to about ¼ cup, around 2 to 3 minutes. Meanwhile, mix sour cream and cornstarch in a small bowl, then stir in 1 cup chicken broth. Add this mixture to the reduced broth in the pan. Cook and stir until thick and bubbly, then simmer for 1 minute.
  6. Combine Everything: Return cooked shrimp, sautéed mushrooms, roasted red bell peppers, and capers to the pan. Stir well and heat through. Season with salt and pepper to taste if needed.
  7. Serve and Enjoy: Serve the blackened shrimp stroganoff over the cooked fettuccini pasta and enjoy a creamy, flavorful, and spicy dish.

Notes

  • Ensure shrimp is peeled and deveined for best texture and flavor.
  • Cajun seasoning can be adjusted to taste depending on spice preference.
  • Roasted red bell peppers add a sweet and smoky contrast to the creamy sauce.
  • Use fresh mushrooms for optimal flavor and texture in the stroganoff.
  • Do not overcook shrimp to maintain tenderness and juiciness.
  • The sauce thickens as it simmers; stir continuously to avoid lumps.
  • Salt seasoning is optional as Cajun seasoning and capers add saltiness already.
