Ingredients

Scale

Egg Buns

  • 3 kaiser rolls or French buns
  • 6 eggs
  • 2 tablespoons olive oil (plus extra for brushing)
  • Unsalted butter (for greasing)
  • Salt (to taste)
  • Black pepper (to taste)

Spinach Mixture

  • 2 ounces spinach
  • 2 garlic cloves, minced
  • ¼ cup heavy cream

Seasonings and Cheese

  • 1 ounce feta cheese, crumbled
  • 1 teaspoon za’atar seasoning
  • ½ teaspoon ground cumin

Optional

  • Sour cream (for serving)

Instructions

  1. Preheat Oven: Preheat your oven to 180°C (350°F) to get it ready for baking the buns.
  2. Cook Spinach Mixture: Heat 2 tablespoons of olive oil in a skillet over low heat. Add the minced garlic and cook gently until soft and fragrant. Increase the heat to medium and add the spinach, cooking it just until wilted, about 30 seconds. Stir in the heavy cream, then season with salt and black pepper to taste. Remove from heat.
  3. Prepare Buns: Cut each kaiser roll in half. Gently scoop out the center of each bun half with your fingertips to create a hole large enough to hold a cracked egg.
  4. Arrange in Baking Dish: Grease an ovenproof dish generously with unsalted butter. Place the buns cut side up in the dish. Spoon the spinach mixture evenly into each hollowed bun. Crack one egg into each hole, then sprinkle crumbled feta around the eggs. Season with za’atar, cumin, salt, and black pepper. Finally, brush the tops lightly with extra olive oil.
  5. Bake: Place the baking dish in the preheated oven and bake for 15-20 minutes. The baking time depends on how you like your eggs cooked – less time for runny yolks, longer for firmer ones.
  6. Serve: Serve the buns warm straight from the oven, optionally accompanied by sour cream for added creaminess. Enjoy this flavorful and comforting dish immediately.

Notes

  • Use fresh spinach for the best flavor and texture, but frozen spinach thawed and drained can be a substitute.
  • Adjust the amount of za’atar and cumin to your taste; both spices are key to the distinctive flavor.
  • For a richer dish, you can add a sprinkle of grated cheese on top before baking.
  • The buns should be sturdy enough to hold the egg; softer buns may become soggy.
  • Serve with a side salad or fresh herbs for a fuller meal.
