Ingredients

  • 2 pints cherry tomatoes (3 1/2–4 cups)
  • 1/2 cup extra virgin olive oil
  • 1 shallot, minced (or 1/2 small onion)
  • 2 rounds Boursin cheese (150g each) or 1 large round (250g)
  • 3 cloves garlic, minced
  • 1/3 cup chopped fresh basil
  • 12 ounces medium-cut pasta
  • Boiling salted water (for cooking pasta)

Instructions

  1. Step 1: Preheat your oven to 425ºF.
  2. Step 2: In a large broil-safe 9×13” baking dish, add the cherry tomatoes and minced shallot (or onion). Pour in the olive oil.
  3. Step 3: Season with salt and pepper to taste, then toss the tomatoes and shallot to coat everything evenly with olive oil.
  4. Step 4: Make a well in the center of the baking dish large enough for the Boursin cheese, and place the cheese round there.
  5. Step 5: Bake for 30–35 minutes, until the cherry tomatoes blister and the Boursin starts to brown.
  6. Step 6: When there are 10–15 minutes left, bring a large pot of salted water to a boil.
  7. Step 7: Add the pasta and cook according to package directions until al dente.
  8. Step 8: Drain the pasta and keep it warm by placing a plate on top.
  9. Step 9: Once baking time is up, set the oven to broil (only if your baking dish is broil-safe). Alternatively, bake an additional 5–10 minutes at 450ºF.
  10. Step 10: Broil for 2–3 minutes until the cheese is bubbly and most tomatoes are blistered, watching closely.
  11. Step 11: Remove the dish from the oven, add the minced garlic, and use the back of a wooden spoon to break up the tomatoes and mix them into the Boursin, creating a creamy, chunky sauce.
  12. Step 12: Stir in the chopped fresh basil.
  13. Step 13: Add the cooked pasta to the sauce and stir to coat evenly. Season with salt and pepper to taste.
  14. Step 14: Serve immediately, garnished with extra fresh basil if desired. Enjoy!

Tips & Variations

  • Use fresh herbs like parsley or thyme alongside basil for added flavor.
  • Swap cherry tomatoes for grape tomatoes or halved Roma tomatoes if preferred.
  • Try adding a sprinkle of red pepper flakes for a spicy kick.
  • If you don’t have Boursin, cream cheese mixed with garlic and herbs can work as a substitute.
  • Make sure your baking dish is broil-safe before broiling; otherwise, stick to baking at higher heat to avoid damage.

Storage

Store any leftovers in an airtight container in the refrigerator for up to 3 days. Reheat gently in a saucepan over low heat or in the microwave, adding a splash of water or olive oil to loosen the sauce if it has thickened.

Vegetables & Herbs

  • 2 pints cherry tomatoes (3 1/24 cups)
  • 1 shallot, minced (or 1/2 small onion)
  • 3 cloves garlic, minced
  • 1/3 cup fresh basil, chopped (plus extra for garnish)

Dairy

  • 2 rounds Boursin cheese (150g each) or 1 large round (250g)

Pantry

  • 1/2 cup extra virgin olive oil
  • 12 ounces medium-cut pasta
  • Salt, to taste
  • Black pepper, to taste

Instructions

  1. Preheat the oven: Set your oven to 425ºF to prepare for roasting the tomatoes and cheese.
  2. Prepare tomatoes and shallots: Place cherry tomatoes and minced shallot (or onion) into a large, broil-safe 9×13″ baking dish. Pour in the olive oil and sprinkle with salt and pepper. Toss gently to coat evenly.
  3. Add the Boursin cheese: Make a well in the center of the tomato mixture large enough to hold the round of Boursin cheese, then place the cheese in the middle of the dish.
  4. Bake the mixture: Bake in the preheated oven for 30 to 35 minutes or until the tomatoes are blistered and the Boursin starts to brown.
  5. Cook the pasta: About 10 to 15 minutes before the baking time is up, bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain and keep warm.
  6. Broil for finish: Once baking time is done, switch the oven to broil. If your pan is broil-safe, broil for 2-3 minutes until the cheese is bubbly and tomatoes are nicely blistered. If not, bake at 450ºF for an additional 5-10 minutes as an alternative.

  8. Add basil: Stir in the chopped fresh basil to combine its fresh aroma and flavor into the sauce.
  9. Combine with pasta: Add the cooked pasta to the baking dish and stir well to coat all the noodles with the creamy tomato and cheese sauce. Adjust salt and pepper to taste.
  10. Serve: Garnish with additional fresh basil if desired and serve immediately for a warm, comforting meal.

Notes

  • Use a broil-safe baking dish to safely finish the dish under the broiler.
  • If you cannot use the broiler, baking at a higher temperature is an alternative to achieve a bubbly cheese topping.
  • The shallot can be substituted with a mild onion if desired.
  • For best flavor, use fresh basil and high-quality extra virgin olive oil.
  • This dish can be served with a side salad for a complete meal.
