  • 12 tablespoons mirin

Instructions

  1. Prepare the Sauce: In a jar, combine 2 tablespoons dark soy sauce, 1 tablespoon light soy sauce, 3 tablespoons oyster sauce, 1 teaspoon sesame oil, 1 teaspoon sugar, and optionally 1 grated garlic clove. Shake well to mix all ingredients thoroughly.
  2. Cook the Noodles: Follow the package directions to cook 4-6 ounces of ramen noodles. Once cooked, drain them well and set aside to prevent sogginess during stir fry.
  3. Stir-Fry Vegetables and Aromatics: Heat 1 tablespoon sesame oil in a large wok or skillet over medium-high heat. Add the white parts of the chopped green onions along with 2-3 cups of your chosen julienned vegetables. Stir-fry until the vegetables are fork-tender, approximately 5 minutes.
  4. Deglaze the Pan: Add 1-2 tablespoons mirin to the hot pan to loosen any browned bits stuck to the bottom. This step enhances flavor and prevents burning.
  5. Toss Noodles with Sauce: Add the cooked noodles to the pan along with about half of the prepared sauce. Toss everything together thoroughly to combine and coat the noodles evenly. Add more sauce as needed, judging by the noodles’ color—aiming for a medium brown, not too light or too dark.
  6. Serve: Plate the lo mein and garnish with the remaining green parts of the chopped green onions for freshness and color. Serve hot immediately.
